Today, it’s Laura Roullet, her husband Domenico and their 90-strong staff who are committed to perpetuating the soul of the place and the family by offering sincere, warm hospitality. Like the rest of the hotel, the rooms, suites and independent chalets are a hymn to comfort and Alpine tradition. Decorated with wood and stone floors, antique furniture, floral draperies and local objets d’art, each room is unique.

Chef Niccolò De Riu looks after the “Petit Bellevue”, a gourmet restaurant with just five tables, and the “Restaurant Bellevue”, whose menu follows the rhythm of the seasons without ever betraying Italian cuisine. The hotel’s culinary universe also continues at the “Bar à Fromage”, offering an authentic journey into the flavours of the Valle d’Aosta and the mountains. Last but not least, the “Brasserie du Bon Bec” offers a convivial setting for grilled meats, fondues and other dishes to share.

If the dishes are exquisite, they are perfectly complemented by other flavors, thanks to Rino Billia, the in-house sommelier. Always delighted and proud to introduce guests to the refined particularities of his wine cellar, over the years he has carefully selected over 18,000 bottles from all over the world, divided into some 1,600 references and 2,000 labels. Another cellar, another character: Roberto Novali is the historic master cheesemaker of the premises and the maturing cellar, where the finest cheeses from the Italian Alps and the entire country are assembled. Exceptional cheeses that, through their aroma alone, evoke life in the open air, herds and vast green spaces. Roberto is also the king of the Bellevue kitchen garden, a place of cultivation that provides the chef and all his visitors with delicious seasonal vegetables and aromatic plants containing the deep flavor of the soil of this unique place.
